Aged pecorino cheese


It is obtained by maturing the first salt over ten months.

Hard cheese, uniform and with rare straw yellow eyes, with a thin and rough crust; it has a spicy and savory flavor, especially if kid rennet is used in its preparation.

Pecorino is used in the vast majority of the traditional recipes of the area.
